WThis is an easy version of a drink featured on a new drinks list. This is a party-sized prepared mix that's packed full of essence associated with festive period, which makes it ideal for a celebration. Save the extra syrup for breakfast cocktails, sweets, or to make more rounds of this cocktail.
The Bikini Cocktail
Makes enough for 10 people
Ingredients for the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Premix (produces 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
Making the Citrus Syrup: Place all the ingredients inside a pot, bring to a simmer, stirring to dissolve. After that, remove from the stove and let it to cool completely. Transfer into an sealable bottle, cap it and refrigerate it chilled, it will last for about four weeks.
To make Cocktail Base: Mix every liquids in a sizeable container, leave to sit for an hour, then strain , ideally through a fine cloth, making it perfectly clear.
For serving: Add 85ml of the cocktail base to a mixing glass packed with ice, gently stirring lightly for a minute to chill. Strain into an frosted cocktail glass or equivalent, top with a few cranberries and finish by giving it a brief mist with the mandarin essence above the glass.
